The list of OSes (aka manifest) is initially downloaded from downloads.raspberrypi.com (or .org), and that's also where it will download the Raspberry Pi OS images from. All of the other distros are the responsibility of their respective vendors/maintainers. The manifests Imager uses are:
Depending on which version of Imager you are using. If you have a look in those files you can see where the various images are currently stored. I would start with v4 - the newest, since that's what a fully up-to-date Imager will use.
