If the range of pull-up values isn't in the datasheet you can raise that as an issue, ask for that to be included.
In the absence of knowing the value you can use an experimental approach; add another resistor as a potential divider and measure the voltage, calculate what it must be, extrapolate that to a likely range of values.
Or just use pick capacitors until you find a value large enough to provide greater than a one microsecond period. Start high and reduce would be my approach.
