But are they actually shutting down or are they just dropping off your network? And if they're all going down at the same time I suspect the cause something other than the individual Pi.
  1. If they're all headless plug one into a monitor, mouse, and keyboard.
  2. Wait for the problem to occur
  3. Check whether the PI is still running via the directly connected monitor (etc.)
On a related note, you should really avoid just pulling power if at all possible. For all except the Pi5 (which has an onboard power button) make use of a spare GPIO, a momentary push to make button, and the gpio_shutdown overlay. If you use the default (GPIO 3/physical pin 5) for all but the Pi5 that gives you a power on button too.
