It looks like GameStop provides zero support for their product.
From what I can tell, it's a 1 GB Raspberry Pi 4 running Batocera.linux (‘open-source and completely free retro-gaming distribution”) in a large arcade case with built-in monitor and arcade controls: Iconic Arcade Cabinet - GameStop.ca.
I don't know how StarLink connects to anything, but if it's via wifi, here's Batocera's Wi-Fi setup guide.
