sdm can burn a RasPiOS IMG to a disk with either LVM or BTRFS rootfs, in addition to, of course, ext4.
The catch for you is that sdm requires that you customize the IMG with sdm before burning. However, since the customization can be extremely light, so you should be able to make it work with an already-booted RasPiOS disk. I can help you do the minimal customization if you're interested.
Oh, it can also create GPT disks as part of burning, although I don't believe it's been tested on >2TB disks.
