RonR's image-utils are the obvious solution for a complete image that can be restored from the img file or can be mounted to access individual files viewtopic.php?t=332000
However if its known files in known locations then you can just simply copy those files and folders graphically or command line to a USB device.
I do both onto my backup drives.
